A nutty, rich loaf that is moist and delicious. Good toasted for breakfast or spread some local Casco Bay Creamery whipped cream cheese for a healthy Maine snack!

Ingredients

  • 1 cup pitted dates, chopped
  • 3/4 cup boiling water
  • 4 tbsp butter, at room temperature
  • 1/4 cup dark brown sugar, firmly packed
  • 1/4 cup cane sugar
  • 1 egg, at room temperature
  • 2 tbsp water
  • 1 1/3 cups whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp nutmeg
  • 3/4 cup walnuts (or pecans) , coarsely chopped

Instructions

  1. Place the dates in bowl and pour boiling water over them. Set aside to cool
  2. Preheat the oven to 350F. Line the bottom and sides of a 9X5 inch loaf pan with wax paper and grease
  3. Using an electric mixer, cream the butter and sugars until light in fluffy. Beat in the egg and 2 tbsp water
  4. In a separate bowl, mix the flour, baking powder, salt and nutmeg
  5. Fold the dry ingredients into the sugar mixture in 3 batches, alternating with the dates and water
  6. Fold in 1/2 cup of walnuts—saving the rest to sprinkle on top of the loaf
  7. Pour the batter into the prepared pan and sprinkle with remaining nuts. Bake until a tooth pick inserted into the center comes out clean, 45-50 minutes. Let cool in the pan for at least 10 minutes before transferring to a cooling rack to cool completely
