A nutty, rich loaf that is moist and delicious. Good toasted for breakfast or spread some local Casco Bay Creamery whipped cream cheese for a healthy Maine snack!
Ingredients
- 1 cup pitted dates, chopped
- 3/4 cup boiling water
- 4 tbsp butter, at room temperature
- 1/4 cup dark brown sugar, firmly packed
- 1/4 cup cane sugar
- 1 egg, at room temperature
- 2 tbsp water
- 1 1/3 cups whole wheat pastry flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 tsp nutmeg
- 3/4 cup walnuts (or pecans) , coarsely chopped
Instructions
- Place the dates in bowl and pour boiling water over them. Set aside to cool
- Preheat the oven to 350F. Line the bottom and sides of a 9X5 inch loaf pan with wax paper and grease
- Using an electric mixer, cream the butter and sugars until light in fluffy. Beat in the egg and 2 tbsp water
- In a separate bowl, mix the flour, baking powder, salt and nutmeg
- Fold the dry ingredients into the sugar mixture in 3 batches, alternating with the dates and water
- Fold in 1/2 cup of walnuts—saving the rest to sprinkle on top of the loaf
- Pour the batter into the prepared pan and sprinkle with remaining nuts. Bake until a tooth pick inserted into the center comes out clean, 45-50 minutes. Let cool in the pan for at least 10 minutes before transferring to a cooling rack to cool completely
