Maine's Dessert: Blueberry Pie

Recently there has been talk in the news about what dessert best represents the State of Maine. The whoopie pie and the blueberry pie are the only contestants. I vote for the blueberry pie. Maine is known for its blueberries. For me, summer isn't summer without picking gallons of blueberries. When my children were young, I uses to freeze 40 quarts of them every summer.  I have made a lot of pies and muffins and pancakes! As for the whoopie pie, most of them are made with industrial filling. I have no desire to eat them. However, I do have a homemade version I may include here someday.

Maine's Dessert: Homemade Blueberry Pie

Here is my blueberry pie recipe. Make two and freeze one unbaked for unexpected company!

Ingredients

The Filling:
  • 4 cups of blueberries
  • 1/3-1/2 cup maple syrup (use the higher amount for those with sweet tooth!)
  • 2 tbsp. flour (whole wheat pastry)
The Crust:
  • 1/2 cup safflower oil
  • 1/3 cup cold water
  • 1/2 tsp sea salt
  • Whisk together
  • Add a scant 2 cups of flour ( whole wheat pastry and unbleached , any combination-try half and half first)

Instructions

  1. Mix lightly with a fork
  2. Divide in half....a top and a bottom crust
  3. Roll out in-between two pieces of wax paper, wetting counter under wax paper to prevent slipping
  4. Bake 40-45 if the berries are fresh, and 10 minutes longer if they are frozen
