Maple Oatmeal Raisin Squares

These delightful little squares taste just like oatmeal raisin cookie dough. A healthy alternative that will satisfy your cravings for baked treats in just a small bite!
Ingredients
- 10 Medjool dates, pitted and chopped
- 1 cup raw cashews
- ½ cup raw oats
- ¼ cup maple syrup
- ¼ tsp cinnamon
- pinch of salt
- ¼ cup raisins
- raw coconut oil (for greasing the pan)
Instructions
- Put the dates, cashews, oats, maple syrup, cinnamon, and salt in a food processor. Blend until a sticky cookie dough forms, about 30 seconds
- Stir in the raisins
- Coat the bottom of an 8-inch square pan with coconut oil and spread the dough in the pan so it is about a ½ inch thick
- Cover and freeze for 4 hours, until the dough is relatively firm
- Store in the freezer—and enjoy a nice chewy treat when eaten out of the freezer
