Ingredients

  • 2 lbs Chicken thighs or chicken breasts
Marinade
  • 3 garlic cloves, minced
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 3 tbsp Green yogurt (full fat is best)
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • Black pepper
Serve With
  • Tzatziki
  • Salad greens
  • Tomato, diced
  • Cucumbers, diced
  • Pita or flat bread (warmed lightly before serving)

Instructions

  1. Place marinade ingredients in a large ziplock bag and massage and mix. Add the chicken and massage to cover all of the chicken in the marinade. Marinate for at least 2-3 hours, ideally 12 hours and no longer than 24 hours
  2. After marinating chicken, heat 1 tbsp of oil in a fry pan over medium high heat. Remove chicken from Marinade. Cook the chicken for 3-5 minute on each side, until golden brown and cooked through—cooking time will vary depending on size of chicken
  3. Remove chicken from the pan and put onto a plate. If chicken thighs were large or if using chicken breast, you’ll need to cut chicken up
  4. Serve on a pita with salad greens, tomatoes, and cucumbers and top with your favorite Tzatziki sauce or make your own
